Matt’s version is uniquely his, which is no surprise coming from someone who can build anything from scratch and makes the perfect grid cuts without missing a beat. He uses wooden dowel rods (yes, like the kind he uses to build with!) to keep the cuts uniform and precise. A little trick to keep you from slicing all the way through, so each potato fans open like a little edible accordion.

You can keep it simple with just olive oil, butter, salt, and pepper, or you can go wild with toppings like garlic powder, red pepper flakes, sour cream, chives, or even Old Bay (a Maryland classic).
